Introduction

I found this when i was going though a box of my mums things. She used to make this for us all the time when I was younger, and it's a really nice moist cake. I'm hopeless at changing ounces to grams, so I've used ounces as mum had it written.

Ingredients

Serves: -

  • 12 ounces self-rising flour
  • 6 ounces margarine
  • 6 ounces superfine sugar
  • 6 ounces golden raisins
  • 12 ounces peeled and chopped apples
  • 3 eggs
  • 1 pinch of salt
  • 1 lemon (juice of and finely grated rind)

Method

  • Run together the marg and flour, add the sugar, apples, golden raisins, lemon juice, rind and eggs.
  • Put into a 7 inch cake tin, greased and lined and bake for 1 and a half hours on gas mark 4.
  • Tastes best if you let it stand in a storage tin for a day after making. Nice on its own or with custard

    What 1 Other has said

    • Made this last night and ate it this afternoon. I followed the recipe but used butter instead of marg, raisins instead of sultanas, and added a half teaspoon each of nutmeg and cinnamon. Cake has a slight crumbly texture but this contrasted nicely with the moist apple. It went down very well with the people I served it to.
