Serve over simple grilled pork, chicken, fish, lamb, beef, lol vegetables, anything really - goes well with roast chicken and steamed vegetables too:) Also lovely used to dress a simple leafy salad.
- 1 clove garlic
- 500 millilitres roughly chopped fresh parsley
- 500 millilitres mint (or basil or coriander, roughly chopped)
- 1 teaspoon dijon mustard
- 1 tablespoon red wine vinegar
- 1 tablespoon capers
- 1 teaspoon kosher salt
- 83 millilitres olive oil (extra virgin if you like)
