Introduction

I really love this as a quick and easy substantial lunch or light dinner.

Ingredients

Serves: 2-3

  • 1 can tuna (in spring water, drained)
  • 1 can sweetcorn (a small can, drained)
  • 1 red pepper (chopped fairly small)
  • 8 spring onions (about, chopped fairly finely)
  • 1 tablespoon creme fraiche (a generous tablespoon)
