Nicoise Salad

This is a recipe from my mom and I still enjoy making it and eating it. This makes a great lunch. Hope you will enjoy this recipe too.


Serves: 4

For the Nicoise Salad

  • 1 small lettuce (head of)
  • 6 medium boiled, cold potatoes
  • ½ pound fresh green beans
  • 6 quartered tomatoes
  • 13 ounces canned tuna (drained)
  • olives (to garnish - optional)

For the Vinaigrette

  • 1 clove chopped really finely garlic
  • 3 tablespoons red wine vinegar
  • ¼ teaspoon pepper
  • 6 tablespoons olive oil

  • Wash and separate the lettuce and arrange on a plate.
  • In a large mixing bowl combine potatoes, beans and tomatoes.
  • Pour the vinaigrette over the vegetables and carefully toss the vegetables until they are thoroughly coated. S
  • poon vegetables on to the lettuce and top with tuna and/or olives.
  • Serve immediately.
  • For the vinaigrette

  • Place the chopped garlic in a bowl and mash it a bit using a spoon.
  • Then add the pepper and vinegar and stir well.
  • Place in a glass jar and add the olive oil, screw on the lid and shake till combined.
