Roast Tomato, Cheese and Basil Pasta

Introduction

My husband and I had this dish (in a slightly different form) at our favourite Italian restaurant in Brussels (Aglio e Olio, near Place Flagey). It was so fresh and simple, I tried making it at home. It has since become a firm favourite!

Ingredients

Serves: 1-2

Metric Cups
  • fresh pasta (I prefer ricotta and spinach tortellini)
  • cheese sauce (4 cheese flavour)
  • cherry tomatoes
  • Parmesan cheese
  • fresh basil

Method

Roast Tomato, Cheese and Basil Pasta is a community recipe submitted by isabellesmama and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Roast the cherry tomatoes in the oven until skins split and they become slightly brown and tender.
  • Boil the pasta when toms nearly ready.
  • When done, transfer pasta to oven proof dish and pour over the cheese sauce.
  • Grate parmesan over top. Add roasted toms and put dish into fairly warm (150-200°) oven to heat through.
  • When parmesan a bit brown, remove from oven and shred basil leaves over top.
  • Serve and enjoy!
