Corn Relish

Introduction

Lovely with fall and winter dishes or for grilled fish and meat on a summers day!

Ingredients

Serves: 2 1/2 cups

  • ¼ cup minced onions
  • 16 ounces frozen sweetcorn kernels
  • ¼ cup chopped red bell peppers
  • 1 teaspoon chopped garlic
  • ½ teaspoon chopped jalapeno peppers
  • ½ cup sugar
  • 1 cup chicken broth
  • 1 cup apple cider vinegar
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped cilantro
  • ½ teaspoon salt
  • ½ teaspoon cracked black pepper
  • 1 tablespoon raspberry vinegar

Method

  • In a large pan,combine corn, onion, red bell pepper, garlic, jalapeno pepper, sugar, broth and vinegar. Bring to boil, stirring to disolve sugar.
  • Reduce heat, simmer, uncovered 20 minutes until corn is tender.
  • Remove from heat. Cool to room temperature, stirring occasionally.
  • Drain, stir in chives, cilantro, salt and pepper. Mix well, stir in raspberry vinegar.
  • Spoon into serving dish. Cover and refrigerate until serving.
