This is devine! So simple and quick to make but hard to stop eating. I love it also not just for the easy factor but it is really healthy too! Every one of my friends who has tasted this asks if they can have the recipe. I think you should have it too...
- 1 tin cannellini beans (400g - drained)
- 2 cloves finely chopped garlic
- 1 teaspoon finely chopped fresh rosemary
- 1 lemon (juiced)
- ½ cup olive oil
- sea salt flakes (to taste)

Mash the beans in a bowl with a fork, til smooth. Add the finely chopped garlic, rosemary, lemon juice and oil. Mix all together, then taste for salt and add what you feel is best. Chill, and serve with crisped pita bread.
I like to sprinkle on a little grated lemon zest on top before serving, or even add a sprig of rosemary as a garnish. Adding a few drops of golden olive oil on top before serving looks great too. It is also delicious with crudites.
