- 1 tin cannellini beans (400g - drained)
- 2 cloves finely chopped garlic
- 1 teaspoon finely chopped fresh rosemary
- 1 lemon (juiced)
- 125 olive oil
- sea salt flakes (to taste)

Mash the beans in a bowl with a fork, til smooth. Add the finely chopped garlic, rosemary, lemon juice and oil. Mix all together, then taste for salt and add what you feel is best. Chill, and serve with crisped pita bread.
I like to sprinkle on a little grated lemon zest on top before serving, or even add a sprig of rosemary as a garnish. Adding a few drops of golden olive oil on top before serving looks great too. It is also delicious with crudites.
