Avocado, Shrimp and Bacon Salad

Introduction

The avacado, shrimp and bacon were supposed to go on a bed of lettuce, but we had to turn the water off to the house due to my husband fixing the bathtub faucet... so I couldn't wash any lettuce... hence, the recipe not containing lettuce! Serves 2 as a smaller salad or main course

Ingredients

Serves: 2

  • 2 peeled and chopped into chunks avocados
  • 4 slices chopped into 1/2 inch wide pieces bacon
  • 16 ounces salad shrimp
  • 1 dash garlic salt

Method

  • Cook the chopped bacon over medium heat until crispy (or desired preference). Remove bacon pieces from grease and drain on paper towel.
  • In remaining bacon drippings, cook the salad shrimp until heated thoroughly. Add a dash of garlic salt. (There should be plenty of moisture in the pan, to keep the shrimp from shrivelling up.)
  • Scoop shrimp out of liquid and put in bowl. Mix the avocado chunks, bacon pieces, and shrimp and serve while still warm.
