Introduction

A spiky, sharp fresh salsa-y dish, great served with creamy guacamole and tortillas/skins, or with anything else that needs a touch of south American sunny freshness.

Ingredients

Serves: 6

  • ½ can tomato paste
  • ½ cup corn oil
  • 3 large limes
  • 1 crushed garlic
  • 3 large tomatoes
  • 1 bunch cilantro
  • 1 small finely chopped red onion
  • ½ small seeded and chopped green bell pepper
  • 3 finely chopped jalapeno peppers

  • Begin by mixing the oil, tomato paste and 1/2 - 2/3 of the lime juice with a fork or whisk to make a smooth, well combined mixture.
  • Mix in the crushed garlic. Add the diced tomatoes and onion. Add 1/2 the coriander
  • Add the remainder of the ingredients gradually, tasting as you to along to get the right mix. It should taste hot, sharp and very Fresh. Serve with 'Bart's Guac' and tortillas or baked potato skins.
