Funky Carrot Soup

Introduction

A smooth (fat free!) carrot soup, jazzed up with ginger and coriander...

Ingredients

Serves: 0

  • finely chopped fresh gingerroot
  • 1 large diced onion
  • ⅚ litre chicken broth (or vegetable stock)
  • ⅞ kilogram carrots (peeled and diced)
  • finely chopped garlic
  • chopped cilantro
  • toasted sesame seeds
  • 1 pinch of pepper
  • bay leaf

  • Throw the ginger, bay leaf and garlic into the boiling stock, cook for a few minutes
  • Add some freshly ground pepper (not too much!) then throw in all the carrots and cook until soft
  • Fish out the bay leaf, pour the soup (in parts) into the blender, blend until completely smooth.
  • Serve with a good heap of cilantro and sprinkle some sesame seeds on top... Eet smakelijk!! ;-)
