Throw the ginger, bay leaf and garlic into the boiling stock, cook for a few minutes Add some freshly ground pepper (not too much!) then throw in all the carrots and cook until soft Fish out the bay leaf, pour the soup (in parts) into the blender, blend until completely smooth. Serve with a good heap of cilantro and sprinkle some sesame seeds on top... Eet smakelijk!! ;-)
A smooth (fat free!) carrot soup, jazzed up with ginger and coriander...
- finely chopped fresh gingerroot
- 1 large diced onion
- ⅚ litre chicken broth (or vegetable stock)
- ⅞ kilogram carrots (peeled and diced)
- finely chopped garlic
- chopped cilantro
- toasted sesame seeds
- 1 pinch of pepper
- bay leaf
