Melt butter, brown garlic for 2 min. Add cumin, brown an additional min. Add remaining ingredients, except cilantro. Bring to boil, reduce heat. Simmer for 1 hr., then add cilantro. Put 1/4 cup of grated cheese in bottom of bowl and a few chips. Add soup, then top with a little more cheese, chips. You could also top with some diced avocado as well. Enjoy!
