Introduction
This is my own version of a spanish omelette. Its made with cubed fried potatoes and an egg which is cracked in and mixed in at the end to resemble scrambled egg. Its great stuffed into a toasted pitta with salt and pepper and lemon squeezed over. A great lunch!!

- ½ onion (finely chopped)
