Can I use regular cream instead of double cream in the Salted Caramel Sauce recipe?
Nigella's Salted Caramel Sauce is an easy to make sauce that can be served with many things, or used as a base for Salted Caramel Brandy Butter. The recipe uses British double cream, which has a fat content of around 48%.
As cream varies across countries, we are not sure exactly which type of regular cream is being referred to, but most countries have cream that can be whipped and as long as the cream has a minimum fat content of 35% then it should be fine. We also think that thickened cream should work, but again check the fat content first. For this particular recipe UHT cream can also be used as long as the fat content is high enough.
