Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is a damp, sticky ginger cake that will satisfy both vegans and non-vegans. The cake is cooked in a 23cm/9-inch square cake pan.

The majority of these square pans have a depth of 4cm/1⅝ inch and this would be the minumum we would suggest for the gingerbread, though a deeper pan would also be fine. If you are concerned then we suggest that when you line the pan, the lining paper protrudes 1-2cm/½-¾ inch above the top of the pan as this will help to prevent any overflow. Please also note that as the cake batter is quite liquid, you should use a pan with a solid base and not a loose base.
