Hello! I want to make the Apple and Cinnamon Muffins but only have self-raising wholemeal and self-raising regular flour. Can I use either (or combine both) of these in place of the spelt flour, and, if so, should I drop the baking powder? Thank you!

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are a good way to use up apples that have been sitting in the fruit bowl a bit too long or if you have a glut of apples. The recipe uses spelt flour and baking powder. The muffins were tested with wholemeal (whole wheat) flour but they were slightly heavy in comparison, so on balance we prefer to use regular white flour if spelt is not available.
The main problem with using self-raising flour is that it has a slightly higher proportion of leavening than the amount used in the recipe and this may affect the texture of the muffins slightly by making them puff up a little more. However, if you only have self-raising flour available then you could certainly try the muffins with this and we would suggest using the white self-raising flour and omitting the baking powder completely. We would, however, mention that as we have not tried the recipe ourselves with self-raising flour, we are unable to guarantee the results.
