Basic Muffins

Makes a dozen, they rise well.

Ingredients

Serves: 12

  • 2 cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons superfine sugar
  • 1 egg
  • 1 cup milk
  • ¼ cup melted butter

Method

  • Pre heat to 375degrees-
  • Mix flour, baking powder, salt and sugar in bowl. Add a slightly beaten egg, milk and butter, stirring only enough to dampen the flour, the batter should not be smooth.
  • Spoon into muffin cases and bake for 20- 25 mins.
  • For Choc. chip muffins i add a couple of packs to batter.
  • Blueberry muffins use half cup sugar. Reserve quarter cup of the flour and sprinkle over blueberries and stir into batter last.
  • Wholewheat muffins- use 3/4 cup wholewheat flour and 1 cup white flour.
  • Date or raisin muffins add 1/2 cup chopped dates or 1/3rd cup raisins to batter.

    • I used this recipe to make blueberry muffins as it suggested that you could. However, there were no quantities given for the blueberries. It might be an idea to give a quantity.
