Introduction

I love this muffin recipe. I did a bit of re-jiggling so they blow up a bit more, and you can add any filling that you like, blueberries, nuts, chocolate drops, raisins, or apple and cinnamon

    • This is a good recipe, works well. I like to add fresh fruit. Today, blueberries and raspberries with lime syrup spooned over when hot out of the oven. So good!

    • I made these with what I could muster. 2 grated apples, chopped dates and walnut pieces. I added cinnamon too. This made 15 muffins. My husband loved them and they went in his lunch box for the whole week and kept well in an airtight container.

    • To make the muffins dairy-free, I replaced the milk and soda with 200ml water and 2tsp baking powder. This is probably not chemically accurate, but they rose HIGH and are lovely & fluffy! Of course I used baking margarine instead of butter. I added 1tsp vanilla essence and some dark chocolate chips :)

    • My kids love these muffins, they are super quick and easy to make, and they come out soft and sort of fluffy! We add large chocolate drops to them. I would recommend this recipe to any mum in a hurry.
