This month’s Cookalong is Nigella’s Lemon Pavlova from Simply Nigella. First you carefully construct your meringue base, which will be crisp on the outside with a marshmallowy interior. Once baked and cooled this is turned upside down on a plate and slathered with whipped cream. Then lemon curd is carefully placed on top – you can make your own or use a good shop-bought one. All that’s left to do is decorate the top with toasted flaked almonds. It tastes as good as it looks, so get baking and then photograph your Lemon Pavlova, add your caption, then send it to us, and you will be in the running to win a signed book of Nigella’s.
